Why Leave Home for Piri Piri?

Piri Piri (or Peri Peri) has unsurprisingly taken off in a big way. With the word ‘Nandos’ evoking groans of food lust, it seems a shame that you should have to go all the way there to get it. Well, there’s the good news – you don’t!

Attempting to re-create the Nandos effect,  I mixed a Piri Piri marinade. The result was gorgeous, juicy chicken with a spicy zing. It is also incredibly easy. Serve with corn on the cob, salad and/or lightly spiced rice for the full experience.

Ingredients (for 2):

2 large chicken breasts

2 tbsp olive oil

1 tbsp ground coriander

1 tbsp paprika

1 fresh red chilli, finely chopped

Juice of half a lemon

1 garlic clove, crushed, or 1 big tsp garlic paste


1. Place the chicken breasts in a bowl. Add the oil, spices, chilli, garlic and lemon juice and mix well. Cover and leave to marinade for 2-3 hours, or overnight, in the fridge.

2. When ready to cook, simply fry the chicken with the marinade in a pan for around 20 minutes, turning occassionally. To keep them nice and moist, cover with a lid when you’re not turning the chicken. When the juices run clear and the chicken is totally white inside, sprinkle with salt and serve immediately.
